Christopher is the kind of Chef who believes food should be fun, a little unpredictable, and always worth showing up for. The founder and creative engine behind Food Truck, he doesn’t stick to one cuisine - and that’s exactly the point.

“I don’t follow recipes. I follow cravings.”

Raised in a family where cooking wasn’t just a skill it was a way of life - raised in the industry - he started cooking at 13 and never really stopped. Now at the age of 29, he’s been in the kitchen (in one form or another) for more than half his life.

Food Truck is his way of feeding people something bold, honest, and worth talking about - whether it’s your first bite or your fifth visit this week.

Food Truck isn’t trying to be fancy. It’s just trying to be your new favorite place to eat.


Why call it ‘food truck’?

“Because that’s what it is.

People love the idea as much as I do and it gives me such freedom to be creative, weird, and a little unhinged. Just how it should be.

I didn’t want a fixed identity or be stuck in place by one cuisine or item. I wanted a blank slate. Something we could build every week, one rotating menu at a time.”

In every kitchen Family Meal is the one we make for each other - a pause in the chaos to share something real. We’re keeping that spirit alive with our FAMILY MEAL Donation Program. When you add “Family Meal” to your order, you’re helping us prep and serve meals for neighbors in need across Albuquerque. No fluff. Just real food, from our truck to the community.

FAQs

do you handle food allergies?

A: We take allergies seriously - cross contamination is no joke. Let us know what you’re working with and we’ll do our best to accommodate. That said, we cook in a small space with shared equipment, so we can’t guarantee an allergen free kitchen.

Is your food gluten free?

A: Some of it is! We label gluten free (or can be made GF) and we are always down to modify when possible. Just ask. We got you.

what forms of payment do you take?

A: All of em’. Cards, Apple Pay, tap-to-pay, cash, maybe even snacks if the vibe is right. (Okay, mostly cards and cash - but we are flexible.)

what kind of food do you serve?

A: We cook whatever tastes good and feels right. The menu changes, but the flavors always slap. Expect scratch-made eats inspired by global flavors, local love, and a little chaos

Where can i find you?

A: We roll around Albuquerque! Check our instagram and Email List for weekly locations, drops, and pop-ups. We post every Monday - plan your cravings accordingly.

Are you vegan/vegetarian friendly?

A: Always. We design with flexibility in mind, and most dishes can be made plant based. Ask us at the window or check for the (V) and (VG) on the menu.

do you do catering or private events?

A: Yup - hit the contact form or DM us. We love a party and we travel light. Whether it’s a wedding, late-night rave, or team lunch, we’ll bring the flavor.

how do i suggest a dish or sauce idea?

A: We love weird ideas. Use the Cravings Form in the contact page or drop it in our DMs. If it bangs, we might just cook it.

What is family meal?

A: It’s our way of giving back. Add “Family Meal” to your order to donate $5+ toward scratch-made meals for folks in need. We prep them in batches and hand them out directly, no questions asked.

how long is the wait?

A: Depends on the rush. We cook most things to order, so sometimes there is a line - but we move fast and it’s worth the wait. If we’re in the weeds, we’ll give you the real time vibe.

are you hiring? Can i work with you?

A: Not yet - we’re just getting rolling. But if you vibe with the food, the mission, and the madness, let us know. We’re always down to connect with good humans for future collabs and growth.
